Actually, yes! The cinnamon in your spice cabinet is probably fake!

Okay, I mean there are TWO main types of cinnamon:

Cassia cinnamon and Ceylon cinnamon.

Cassia cinnamon has a very strong, spicy flavor and is the most common type found in all supermarkets. It is usually a little darker in color and has a coarser texture than Ceylon cinnamon. It is also cheaper and considered to be of lower quality than Ceylon cinnamon.

Ceylon cinnamon, or “true cinnamon”, is less common and more expensive than Cassia cinnamon, and has a flavor that is described as “subtle and sweet”.

So what's the difference between the two types of cinnamon?

Both are delicious culinary uses and have been studied for their health-promoting effects, but the big difference is that Cassia cinnamon contains the toxic compound coumarin, which can be very dangerous in large doses. Coumarin has been known to cause kidney, liver, and lung damage in rodents.

Cassia cinnamon contains about 1% coumarin, so just 1-2 teaspoons is over your daily limit! So, if you're a big cinnamon eater and regularly add this spice to your meals, consider switching to higher quality Ceylon cinnamon!
